It's National Watermelon Day, and sure, you can simply indulge in a regular slice of it, but why not go a step further by creating a watermelon cocktail, or whipping up one of my favorite summer recipes: Grilled Watermelon Salad!

If you've never thought of watermelon in a savory way, this might sound like an odd combo of ingredients, but trust me, the flavors all come together to create a fabulously sweet, salty, and slightly smoky dish that just screams summer!

**NOTE: Half the beauty of this salad is adjusting the amounts to suit your tastes. For example, I like less mint and more balsamic on mine, but you might like more mint and less cheese...etc. Play around. Find what you like. This recipe serves 1, mostly because Duzzy doesn't understand watermelon in salad.

Ingredients (See note above!):

  • 2 seedless watermelon slices, approx 1 in. thick (and long enough that they won't fall through the grill - think 6-8 oz. of watermelon per person)
  • 1/4 cup crumbled feta cheese
  • 2 fresh mint leaves, julienned (cut into thin strips)
  • 1 Tbls. Balsamic glaze (you can buy this pre-made, or simply reduce balsamic vinegar on the stovetop until it gets nice and syrupy!)
  • salt, to taste
  • 1 tsp. olive oil

Lightly drizzle each piece of watermelon with olive oil -- if you have an olive oil sprayer, this is a perfect time to use it! Place each slice of watermelon on a hot grill, for 2 minutes per side, so they get nice grill marks - don't overcook them or they'll fall apart! Cut the grilled watermelon into smaller bites, then combine with the feta and mint, and top with the balsamic glaze. (You may need to add salt, depending on how salty your feta is.)

I could seriously eat that salad ALL. DAY.

If you don't want to deal with the mess of the grill, you can just use regular watermelon chunks, it's just not as good.
