Pina Colada – Cocktail of the Week
Full disclosure: I will soon be in a tropical area where today's high temperature is 83. I figure since I can't take you all with me, you'll have to pretend.
What better way to imagine yourself on a tropical vacation than with a frozen cocktail?
As soon as I get to my destination I intend on kicking back with a fresh Pina Colada, our cocktail of the week.
Ingredients:
- 1.5 oz white rum
- 4-5 oz. pineapple juice (unsweetened)
- 1.5 oz cream of coconut
- pineapple slice (to garnish)
- maraschino cherry (to garnish)
- whipped cream (optional) (to garnish)
Blend all ingredients with 5 or 6 ice cubes (add one at a time so they get nicely crushed). Garnish with a little whipped cream, a pineapple slice and a maraschino cherry. Why not add a tiny little umbrella while you're at it??
Switch it up:
Instead of rum, use vodka! (This drink is called a Chi Chi)
Use a flavored rum (like cherry, mango, or raspberry to infuse your cocktail with extra fruit flavors.)
Instead of blending the ingredients into a frozen cocktail, try shaking them with ice instead for a thinner drink!
