A crock-pot stew is the perfect winter meal, especially during a blizzard. The preparation is easy for this hearty stew.

First, season and sear lamb-chops in about a tablespoon of olive oil. Chop a variety of healthy vegetables including celery, parsnips, carrots, sweet and russet potatoes, fennel, onion, and garlic. Position the lamb at the bottom of the crock-pot, add the chopped vegetables, a cup of rinsed kidney beans, fresh parsley, bay leaf, and seasoning. I also include the rind from a wedge of parmesan cheese for added flavor.

Cover the ingredients with spring water, set the crock pot on high for about five hours and let the magic begin.
