A crock-pot stew is the perfect winter meal, especially during a blizzard. The preparation is easy for this hearty stew.

First, season and sear lamb-chops in about a tablespoon of olive oil. Chop a variety of healthy vegetables including celery, parsnips, carrots, sweet and russet potatoes, fennel, onion, and garlic. Position the lamb at the bottom of the crock-pot, add the chopped vegetables, a cup of rinsed kidney beans, fresh parsley, bay leaf, and seasoning. I also include the rind from a wedge of parmesan cheese for added flavor.

Cover the ingredients with spring water, set the crock pot on high for about five hours and let the magic begin. Eaten in moderation, lamb is a valuable source of protein and nutrients including iron, zinc, selenium, and B12. Stewed vegetables have many health benefits such as lowering your risk of certain types of cancer, high blood pressure, and heart disease.
