My salads take a pretty long time to prepare...but they are full of fun!

I would eat a lot more salads if it didn't take me so long to prepare them, but I do love the way they come out once they are finished!

We love finding some fun, fresh produce to put in the salads, but it does take a long time to clean, spin, peel, and chop everything that we like to have in our giant bowl. Our salads are really a meal instead of a prelude to dinner. And I prepare four giant bowls at a time so that we have a couple left for the next day. (The toppings and dressing are added fresh so that the extra salads don't become 'mushy' in the fridge.)

This weekend's salad consisted of: spinach, arugula, red cabbage, English cucumbers, tomatoes, carrots, green peppers, orange peppers, flax seeds, sunflower seeds, slivered almonds, chunks of fresh blue cheese, sprinkled lightly with Pecorino Romano cheese, craisens, chinese noodles, and dressed with olive oil and fig-infused balsamic vinegar.

Sometime of the other choices I sometimes add include I like fresh corn, peas, beets, different types of beans and chick peas, or chopped, fresh apple or pear.
