My first 29th birthday came and went this week (yeah, you read that correctly) and I figured when it comes to celebrating...why shouldn't you be able to drink your cake?

This festive cocktail can go by many names...birthday cake martini, Un-Birthday Martini, vanilla cake, or even pineapple upside down cake.

No matter what you call it, have yourself a Happy (Un)Birthday!

Ingredients:

  • 2 oz. vanilla vodka
  • 2 oz. pineapple juice
  • .5 oz grenadine (optional)
  • vanilla frosting (to garnish)
  • rainbow sprinkles (to garnish)

Rim a martini glass with vanilla frosting and sprinkles. (*Pro tip: if you use non-pareils like I did, it's easiest to put them in a shallow bowl and dip the frosting coated glass into the sprinkles...if you attempt to shake them over the glass, you'll get sprinkles everywheres. Seriously. EVERYWHERE. Sigh.)

Shake the vodka and pineapple juice over ice and strain into the garnished glass. Pour the grenadine into the glass (it will sink to the bottom, and will also turn this into a pineapple upside down cake martini.)  Shake a couple of sprinkles on top of the drink if you feel so inclined. Enjoy!

Switch it up:

Make a different version of a birthday cake martini. Shake 2 oz cake-flavored vodka, 1 oz. creme de cacao, and 1 oz. cream over ice and pour into a martini glass.
Use chocolate frosting instead of vanilla on the rim.
