I consider myself a bit of a pizza connoisseur, I guess we all do, but when it comes to digging into some amazing pizza, I'm not afraid to get my hands dirty and my face a little messy.

We have an embarrassment of riches when it comes to great pizzerias in New Jersey, but when I walked into Nickolas Pizza in Brick, I knew I was in a special place.

The first thing I noticed was the smiles on all the faces of the staff. Pizza is a joyous occasion, and a pizzeria with a lot of smiles is a pizzeria with good pizza.

The second thing I noticed was the fresh mozzarella. As the famous movie line goes, "you had me at mozz", or something like that.

If you're making fresh mozzarella, you're moving up my list quickly. All the signa re good signs so far.

The next thing I notice is the amazing smell. It's all the great aromas that a quality pizzeria should have.

And then it happened. I saw a fresh, square Grandma Pie coming out of the oven, and I immediately ordered one. I wondered how this pie could live up to the expectations that were already in my head.

40 minutes later, while I was wiping some sauce from my face, I had the answer. The napkin got the sauce, but it couldn't wipe the smile off my face. This pizza was everything I'd hoped it would be and so much more.

Nickolas Pizza & Restaurant is located at 1820 Lanes Mill Rd., near the Garden State Parkway in Brick, and it's worth the trip from wherever you are in New Jersey.
