When you think about legit Mexican cuisine in Ocean County, most people immediately think Casa del Soul. It's been a mainstay since 2005 and both the business and the owner are survivors.

Jorge and Patricia Ramirez opened the first Casa del Soul in Seaside Heights. In 2010 the restaurant was destroyed by a fire. They rebuilt. The business was destroyed again by Superstorm Sandy. They rebuilt.

At this point, they decided to reopen inland in Toms River. Tragically, during the construction of Casa del Soul Toms River, Patricia Ramirez learned she had breast cancer. Following numerous rounds of chemotherapy, Patricia underwent a double mastectomy. Just her family business over the years, she survived.

Soon after Patricia's mastectomy, she learned that she had thyroid cancer. But Patricia is a survivor and a fighter.

I'm happy to say that Patricia is in remission. Rachael Ray felt that this very strong businesswoman, mother, and wife deserved a day of pampering.
