I don't often bake, but when I do, I enjoy it. I happened to have some leftover canned pumpkin, which fairly easily turned into some incredible pumpkin chocolate chip squares, which I honestly intended to serve for Thanksgiving dessert. Suffice it to say, there's only one left, and I call dibs!

I have to say, I'm not a huge fan of Martha Stewart...but when it comes to recipes, the woman is a genius! A few weeks ago I tried my hand at her tiramisu cupcakes. The key is to follow her instructions to the letter...trust me, you will be rewarded. The cupcakes probably took me 6 hours to make from start to finish, but oh man, were they good!!

The pumpkin-chocolate chip squares though? MUCH easier. They weren't too pumpkin-y, with a perfect balance of chocolate and a fabulous brownie-like texture.

They were obviously good because I tried one as soon as they were cooled off...and then I tried another one...and well, I DID pack up a few to give to friends, but, let's be serious, I ate most of them before they had a chance to be served for Thanksgiving.

So...I don't have many dessert making ingredients in the house, but if any of you know of a quick and easy dessert I can make today, please let me know...otherwise it's gonna be my world famous store-bought cookie cake and pint of vanilla ice cream!!
