Caribbean Queen – Cocktail of the Week
It's National Pina Colada Day, and we'd be remiss not to celebrate.
If you don't want to stick with the traditional pineapple-coconut concoction, this week I have a yummy take on it that'll have you feeling like you're beachfront in the Caribbean!
Let's make you a Caribbean Queen!
This drink is frozen, fruity, and the color of Caribbean seas...and I could drink them all day.
Some of you may remember hearing about this drink after it won a mixology contest during my vacation from hell.
Ingredients:
- 1 oz white rum
- .5 oz. blue curacao
- .5 oz. melon liqueur (like Midori)
- 4 oz. pineapple juice (unsweetened)
- 1.5 oz cream of coconut
- fresh pineapple slice, to garnish
- whipped cream, to garnish (optional)
Blend all ingredients with ice and pour into a hurricane glass. Top with whipped cream, if desired, and garnish with a pineapple wedge and (obvi) a tiny umbrella.

Switch it up:
Use more or less of any ingredient to suit your tastes.
Try a coconut, pineapple, or other flavored rum.
Use vodka instead of rum.
