If you want to take a break from traditional pizza, try my Pizza Bianca, which you can also make on the grill if you have the right pizza stone. Stretch the dough onto the pizza stone and brush with extra virgin olive oil and garlic. If you want to take a shortcut and sprinkle garlic powder, you can. However, diced cloves of fresh garlic is the way to go.  Grill the oil and garlic-flavored crust for approximately 8-10 minutes. Remove from the grill and spread three heaping tablespoons (don’t be cheap) of creamy ricotta cheese.  Sprinkle parmesan cheese (be generous) over the ricotta. Add slices of smoked mozzarella (trust me on this one) and fresh basil. Add fresh ground black pepper and return to the grill for another 8-10 minutes.  Be sure to let the pizza rest for about five minutes after grilling before cutting it into slices (it will feel like the longest five minutes ever).  Buon Appetito!
