New Jersey is known for many things. The beaches, the parkway and turnpike, the four seasons, diversity of people, pork roll, but most of all for its great produce! Tomatoes and corn rank at the top. I myself love Jersey fresh zucchini and squash. I love trying new things, especially if they are on the healthier side.

Now don't get me wrong, I LOVE pizza, pork roll, and pasta, but lately, I have been trying to make healthier choices when I eat. When I was in Florida this past spring, a friend of mine took me to a restaurant that was super healthy but the food actually was packed with flavor. My friend introduced me to "zoodles"! Now coming back to New Jersey has left me craving these zoodles. What is a zoodle? Well, it is a healthier version of pasta. You may have heard of spaghetti squash, which I love, but zoodles are different. It's just a veggie shaped like pasta.

All you need is a zucchini or a squash right from your garden or favorite produce stand.  I use a "Zoodle Maker" to make mine, but I know there are attachments on some kitchen appliances that you can use as well. I take a pan with a tablespoon or 2 of EVOO. Heat that up, throw in chopped red onion, fresh garlic and saute that. Then I add the zoodles, fresh spinach, fresh ground pepper, and add any seasonings and salt if you like. Quarter about a handful of fresh grape tomatoes and add them. Keep stirring until all items are cooked and then remove from the heat. Feel free to add chicken or shrimp. You can even add cream to make it creamy. Throw in what you like, take out what you don't! The skies are the limit with this dish! When it's done I sprinkle fresh Parmesean over top!  YUM!
