With summer in full swing, BBQ’s seem to be a weekly adventure for many of us. So what can you bring to the BBQ that is simple, yummy and not super expensive? I have a couple of recipes that are super yummy and can be tweaked to your liking. The first one is Mango Shrimp Salad. It’s kind of like a Ceviche and can be eaten as a salad or with tortilla chips. It’s definitely my go-to for sharing. The other is a Spinach and Fruit Salad. Super light and delish!!

Mango Shrimp Salad

You will need:

2 avocados

2 mangos

2-3 lbs. of cooked jumbo shrimp (chopped into bite sized pieces)

1 lime (cut in half)

30 grape tomatoes (quartered)

½ red onion (finely chopped)

2 garlic cloves (finely chopped)

Jalapeño (finely chopped use as much as you like, can be ommitted)

Cilantro (finely chopped, use at least ¼ cup)

Salt and fresh ground pepper (to taste)

Directions: 

  1. Cut the avocado into small squares.
  2. Cut lime in half and squeeze juice over the avocado and gently toss.
  3. Cut the mango into bite sizes pieces and add to avocado and gently toss.
  4. Add the shrimp, tomatoes, red onion, garlic, jalapeño, cilantro.
  5. Squeeze the other half of the lime over salad, add salt and pepper and gently toss.

Spinach Fruit Salad 

You will need:

1 bag of Spinach rinsed and dried

1 Red Pepper (cut into bite sized pieces)

1 Orange Pepper (cut into bite sized pieces)

1 Yellow Pepper (cut into bite sized pieces)

1 small Zucchini (cut into bite sized pieces)

1 Pear (cut into bite sized pieces)

A handful of Baby Carrots (quartered)

5 or 6 strawberries (cut into bite sized pieces)

2 Tbsp chopped Cilantro

Your favorite Italian dressing. (I like Wishbone Zesty Italian)

Directions: 

  1. Cut all ingredients.
  2. Combine all ingredients
  3. Add dressing.
  4. Eat and ENJOY!
