Here’s a suggestion for a simple yet tasty Sunday Sauce.

Visit your local farmer’s market for quality plum tomatoes. Bake your ripened tomatoes in the oven for 45 minutes at 400 degrees. You can also roast the tomatoes in the barbeque if you prefer. This technique brings out the natural sweetness of the tomatoes, so no need to add sugar.

Let the tomatoes sit in the oven to cool and peel them when ready. In a bowl, add a tablespoon of extra virgin olive, 2 garlic cloves or chopped garlic, fresh oregano, basil, a pinch of salt and hot pepper flakes. Cover the sauce and refrigerate overnight, allowing the flavors to settle together.

When you are ready to prepare your Sunday dinner, you can quickly heat up the sauce for homemade pizza or your favorite pasta dish. You’ll never go back to canned sauce after this! Molto Buono!
