Perfect Summer Recipe: Easy Zucchini Jars
What are you going to do with all of those zucchini growing in your garden?! Get some mason jars and get ready to get busy in the kitchen.
Jarring zucchini, mushrooms, eggplants and other veggies are a summertime tradition in my family. There are so many benefits you will enjoy with this easy food preparation pastime.
First, there are many health benefits including vegetables that are BPA-Free, preservative free, prepared with no harmful additives. Second, you are reducing waste so you can check the “eco-friendly” box. Third, it’s more cost effective to stock your pantry and finally, you will be supporting your local farmers and farmers markets. The process is something the whole family can do together:
Wash and slice your zucchini in ¼ inch size chips, blanch them in apple cider vinegar, allow them to cool before adding garlic, Kalamata olives, sun-dried tomatoes, capers, red crush pepper, oregano and extra virgin olive oil. Stack the jars in the pantry and you’re all set. You will get personal satisfaction every time you enjoy a jar with your family and friends.
