It's National Spumoni Day, a day to celebrate the Italian dessert of pistachio, chocolate, and cherry ice creams and candied fruit and nuts.

Today, we're turning the popular dessert into a yummy cocktail!

Let's get to making a Liquid Spumoni!

Now, seeing as the base of this dessert is ice cream, it'd be silly to not have ice cream as an ingredient in the cocktail!

Think of this as an soda float for grownups (which also means it's pretty easy to make kid-friendly.)

Ingredients:

  • 1.5 oz chocolate vodka
  • 1 scoop pistachio ice cream
  • 3 maraschino cherries, plus 1 Tbls. syrup
  • 6-8 oz. club soda or seltzer
  • crushed nuts (like almonds or peanuts), to garnish (optional)

In a tall soda fountain glass, (or whatever appropriately sized vessel you have to make this in) gently muddle the cherries with the vodka. Add the ice cream, and top with soda. Garnish with nuts, if desired.

Switch it up:

Make this kid-friendly by swapping out the chocolate vodka for 1-2 Tbls. chocolate syrup or white chocolate sauce.
